Chocolate Truffles for my Love
I love chocolate, I can eat it all day, every day. I think chocolate is the most amazing ingredient because you can work with it in so many techniques and temperatures. One of the things my “cherie” loves the most is chocolate ganache, which is a mixture of chocolate and heavy cream that we use in all kinds of cakes, desserts and chocolate bonbons.
In order to make her happy in this crazy situation, I decided to make her Chocolate Truffles that are made of chocolate gancache, butter and I added a little bit of alcohol, to give it a small twist of Parisian chic flavor.
Chocolate Truffles for my Love
25-30 truffles
Ingredients
250 g dark chocolate 70% chopped
180 g heavy whipping cream
40 g butter
20 g Rum
for coating: cocoa powder
Preparation
1. Heat the cream until simmering.
2. Pour the hot cream over the chocolate in a bowl, stir to make a smooth cream (ganache).
3. Add butter and stir to make a smooth cream.
4. Add Rum and stir.
5. Pour the chocolate ganache into a pan covered with saran wrap. Place in the refrigerator for 3 hours.
6. With a teaspoon roll out balls of the ganach. It’s recommended to roll it in your hands, as quickly as possible, so it won’t melt. Place the balls on a baking sheet lined with parchment paper. If the balls melt you can place it refrigerate for 1 more hour.
7. Roll the balls in cocoa powder and keep in the refrigerator for up to 3-4 days.
A Sweet Tip If you want to feel the real truffle taste, eat it in room temperature.

Hey 🙂 you can remove it if you don’t want to use it.

Any liquor can be used instead. I use drambuie or whiskey. Another good replacement that kicks the senses is to use chilli extract

I try it and its amazing! The only thing i did different was that i put the ganache in the freezer for 15 min and the consistency was perfect to do the rolls.
And a plus, is that i use edulcorated chocolate because i am diabetic and they turn out amazing! Now i can eat truffles without sugar! Really thank you for this recipe!
